Feta and Kale sauté = Lunch in a pinch!

Sometimes there’s just no reason (or desire) to spend hours in the kitchen, and sometimes there is (when you have a bottle of wine open and no competing priorities). But, let’s face it – day to day life gets pretty busy. Here’s a simple meal that you can create in less than 15 minutes. It’s a marriage of a few gems from the farmer’s market and some items you likely already have on hand.

(vegetarian, gluten free)

Ingredients:

  • Kale
  • Baby tomatoes
  • Scallions
  • Olive Oil
  • Feta Cheese
  • Sea salt and pepper to taste

Equipment:

  • Knife
  • Cutting Board
  • Frying Pan
  • Stirring spoon/spatula

Wash and cut a few leaves of kale and 2 scallions. Add a splash of olive oil to your pan and saute for 5-7 minutes at medium heat, stirring occasionally. While the kale and scallions are cooking, cut a few of the baby tomatoes into halves or thirds. Cut the feta into small cubes. Remove the kale/scallion/oil mixture from the stove and display on your plate. Top with the cubes of feta and pieces of tomato. Drizzle with olive oil. Top with fresh, cracked pepper and a bit of sea salt. Serve immediately.
