Baked Cabbage Wheels

This is SO simple and surprisingly delicious. I’m a huge kale-chip addict, but baked cabbage gives my love of baked kale chips some competition! When baked, the cabbage loses its “cabbage-y” flavor and becomes more subtle, buttery, and smooth.  As an excellent source of Vitamin C and Vitamin K, cabbage provides natural antioxidants and supports healthy bones.

Even if you’re not a fan of cabbage, give this recipe a try – you might change your mind.



-Sea salt
-Olive oil
-Cracked pepper
-Lemon juice (optional)

Pre-heat the oven to 350 F. Wash and slice the cabbage in approximately ½ inch slices. As you’re cutting, the slices should resemble circular wheels. Spread on a baking sheet and drizzle well with olive oil. Top with fresh spices as desired. Bake for 35 – 40 minutes until the edges start to get crispy. Drizzle with a bit of lemon juice if desired. Enjoy as is, or serve with an egg over-easy. Another serving option is to serve this as an appetizer with olives, fresh almonds, and cheese.
